It’s Halloween.  Time to carve pumpkins and eat massive amounts of sugar. This year, I finally got over my need to dress silly and go in public. Instead, I focused on my need to watch bad zombie movie marathons while drinking Shipyard Pumpkinhead.   Somehow, between planning for the zombie apocalypse and marveling over how fast zombies move in Zombie Apocalypse (Original SyFy movie…wouldn’t recommend), I stuffed myself on apples.  Not just apples, that would be too healthy.  But apples dipped in the creamiest, tastiest caramel dip known to man.
Our family has been making this for years, and I have yet to find anything better (Other than actual caramel apples, that have also been dipped in chocolate).  As a child I was always amazed this recipe does not actually contain any caramels.  Actually, I’m still amazed by that.


Creamy caramel apple dip

8 oz softened cream cheese
1/2 c melted butter
3/4 c brown sugar
3 Tbs sugar
1 tsp vanilla

Beat until smooth, refrigerate an hour before serving.  Eat with apples, when there are no more apples, lick off fingers.
